Description
Rich and moist, these cookies are a cousin to the brownie.
Ingredients
3/4 cup nut butter ( almond is what I use)
2 flax eggs ( 3 tablespoons ground flax mixed with 6 tablespoons water, let rest)
1/4 cup water
1 teaspoon vanilla extract
3/4 cup cacao powder
1 cup oat flour
1/3 cup pure maple syrup
1/3 cup brown sugar
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 cup dark chocolate chunks (Enjoy Life brand is good)
Instructions
Preheat the oven to 350 degrees.
Line a cookie sheet with parchment paper.
In a large bowl, combine the nut butter, flax eggs, vanilla, syrup, brown sugar and cacao powder and mix well.
Add the flour, baking soda and baking powder and gently mix to incorporate the dry ingredients. Careful not to overmix too much.
Form into balls with an ice cream scooper onto the cookie sheet. Flatten slightly.
Bake for 8 minutes and let rest. They will appear undone but let them cool totally.
