This antiinflammatory Mediterranean quinoa bowl is packed with colorful vegetables, fiberrich ingredients, healthy fats, and plantbased protein to help support overall wellness, balanced energy, and healing after cancer treatment.
Ingredients
For the Bowl
- 1 cup cooked quinoa
- 1 cup roasted chickpeas
- 1 cup arugula or spinach
- ½ cucumber, chopped
- 1 cup cherry tomatoes, halved
- ½ roasted sweet potato, cubed
- ¼ cup olives
- 2 tablespoons hummus
- 1 tablespoon pumpkin seeds
Lemon Olive Oil Dressing
- 2 tablespoons extra virgin olive oil
- 1 tablespoon fresh lemon juice
- 1 garlic clove, minced
- pinch of sea salt
- black pepper to taste
Instructions
- 1. Add cooked quinoa to a bowl as the base.
- 2. Arrange greens, cucumber, tomatoes, roasted sweet potato, olives, and roasted chickpeas on top.
- 3. Drizzle with the lemon olive oil dressing.
- 4. Add hummus and sprinkle with pumpkin seeds before serving.
