I used to make cookies that were so full of butter and sugar, white flour and yeah, they were really good. I never felt great after having one or two (because we all know that sugar is addictive and you always want more of it). Maybe tired and sluggish may better describe how I felt.
Since adopting a healthier plant based way of eating, I didn’t want to cut out all sweets (I mean, come on!) but I knew I wanted better and healthier ingredients in sweets so you felt energized, maybe even nourished!
The desserts we have on the blog are mostly made with as little fat as possible since we believe that fat is the bad guy. Sugar is not far behind, but definitely behind. So the fats are significantly reduced as well as the sugars. You won’t find not a lot of white flours here either. We did discover some tasty substitutes for the butter, sugar and white processed flours that make your body feel great and energized.
With that being said, these cookies are delicious and thicker than their traditional counterparts, and probably taste less sweet if you are used to the a bakery cookie.
No worries, your tastes will get used to your new and better choices, very quickly.

For your convenience, the ground almond meal can be purchased here. The oat flour can be found at most grocery stores or you can grind up oats your own food processor or blender.

Description
Delicious and nutritious, these peanut butter chocolate goodies are nourishing.
Ingredients
3/4 cup peanut butter
1/2 cup pure maple syrup
1/4 cup brown sugar ( can sub coconut sugar)
1 teaspoon vanilla extract
1 cup of oat flour
1/2 cup of ground nut meal ( I used almond or hazelnut, delivers a nuttier texture)
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 cup non dairy chocolate chunks ( I like Enjoy Life brand)
Instructions
Preheat oven to 350 degrees. Layer a cookie sheet with parchment paper.
In a large bowl, add the peanut butter, syrup, brown sugar, vanilla and stir until all if mixed.
Next add the oat flour, nut meal, baking soda and baking powder and gently fold in until all is incorporated.
Add the chocolate chunks .
With an ice cream scooper, form the cookies onto the cookie sheet. Flatten each ball slightly.
Makes about 10 to 12 large cookies.
Bake at 350 degrees for about 8 minutes or set.
Notes
* pro tip~ better to under bake these cookies as they will set considerably and can become dry if over baked.
* Use high quality ingredients for better cookies. Natural peanut butter is best without added ingredients.
