Vanilla Chia Seed Pudding with Optional Homemade Granola

A delicious high protein breakfast/snack ~ Vanilla Chia Seed Pudding with optional Homemade Granola
Ingredients

- 1 ½ c organic unsweetened vanilla soy milk *
- ½ c unsweetened vanilla greek non dairy yogurt ( I use Kite Hill brand)
- 1/2 c chia seeds
- 1 teaspoon pure vanilla extract
- 2 tablespoons pure maple syrup
Super Easy Homemade Granola Ingredients
- 3 cups gluten free organic oats
- ½ c hemp seeds
- ½ c chia seeds
- 1 cup assorted rough chopped nuts of choice ( I use almonds, walnuts and cashews)
- 1 teaspoon salt
- 1 teaspoon cinnamon
- ½ c shredded unsweetened coconut
- ½ c dried fruit of choice( I like cherries or mango)
- ⅓ c coconut oil
- ½ c brown rice syrup
- ½ c pure maple syrup
- ½ c nut butter (optional)
Instructions
- Whisk all ingredients in bowl, let stand for at least 10 minutes
- Divide into 3 to 4 servings, cover with saran wrap and refrigerate for an hour or more until ready to serve. Top with fresh berries or granola or Both!
Super Easy Homemade Granola Instructions
- Preheat oven to 350 degrees F. Prepare large cookie sheet lined with parchment paper.
- Combine oats to dried fruit in a large bowl ( all dry ingredients)
- In medium microwave safe bowl, combine coconut oil, brown rice syrup, pure maple syrup and nut butter ( if using) and melt in increments until smooth consistency is achieved. This may take a few minutes ( at 30 sec increments)
- Add wet ingredients to dry and combine thoroughly.
- Spread mixture on the cookie sheet on an even layer. I take an extra piece of parchment paper and use it to flatten the granola in single smooth layer
- Bake at 350 for about 20 minutes or until slight golden brown. Let stand and cool completely.
- Can add chocolate chips on top if desired , let melt and spread over evenly.
- Break up granola and store in air tight jar or container with lid in refrigerator for 3 weeks or freeze up to a month.
