Pumpkin Peanut Butter Chocolate Chip Cookies

Delicious cookies, just perfect for Halloween!
Ingredients

- ⅔ c peanut butter (softened)
- ⅓ c canned pumpkin ( not pumpkin pie filling)
- ½ c pure maple syrup
- ½ c allulose or date “sugar”
- 1 ½ c ground oat flour
- ½ c almond flour
- 1 teaspoon pumpkin pie spice
- ½ teaspoon salt
- ½ teaspoon baking powder
- ½ teaspoon baking soda
- 1 cup non dairy dark chocolate chips
Instructions
Method: Preheat oven to 350 degrees F
- In a large bowl: mix peanut butter, syrup, canned pumpkin, syrup and “sugar” until incorporated well.
- Stir in : flours and baking powder and soda, pumpkin pie spice and salt.
- Mix until just incorporated. Dough will be soft.
- Form into balls on parchment covered cookie sheet. Refrigerate or freeze for at least 10 minutes.
- Bake for 10-12 minutes in preheated oven.
- Let cool before moving them onto plate.
- Freeze for up to 3 weeks or refrigerate for a week.
- Cookies will be pillowy soft and delicious.
