Hi-Protein No Bake Decadent Brownies

Hi-Protein No Bake Decadent Brownies With Optional Chocolate Ganache
Ingredients
Scale
- 1 c raw walnuts
- ½ c cacao powder (can sub cocoa powder)
- ½ c chocolate protein powder (preferably without whey or casein protein)
- ½ tsp salt
- 1 cup softened medjool dates (Can soak in hot water for a few minutes and drain to soften), pitted
- 1 tsp pure vanilla extract
- Scant ⅔ c nut butter ( can use peanut butter if desire )
Instructions
- In food processor (have not tried blender to see if it works)~ pulse: walnuts, cacao powder, protein powder, salt until crumbly
- Add: pitted dates, nut butter and vanilla
- Pulse a few times until a dough forms~ can add a tablespoon pure maple syrup if needed to come together
- In loaf pan lined with parchment paper (over hanging for easy removal ) press dough down until flattened. (can use extra piece of parchment to help flatten dough out )
- Refrigerate for couple of hours or you can freeze.
Optional glaze with chocolate ganache:
- In small saucepan, melt 1 tablespoon coconut oil completely.
- Add 1 cup dark chocolate chips and let melt.
- Do not stir. When melted stir with metal spoon.
- Can pour over cold brownies and let sit for another hour.
