Homemade Hi-Protein Granola

Homemade Hi-Protein Granola ~ Make your own healthy lower fat granola in minutes that your body and budget will thank you for!


Ingredients

Scale
  • 3 cups organic old fashioned oats (gluten free if desired)
  • 1 cup high quality clean protein powder (I like garden of eden or ritual brands, but there are many good ones, check labels. Avoid whey or casein proteins)
  • 1 tsp salt
  • 2 tsp cinnamon
  • ½ c pumpkin seeds
  • ½ c raw sunflower seeds
  • ½ c hemp seeds
  • 1 cup roughly chopped raw nuts ( I used almonds, walnuts, pecans)
  • ½ c coconut oil
  • ½ c pure maple syrup
  • 1 c brown rice syrup
  • 1/2 c dark chocolate mini chips

Instructions

  1. Preheat oven to 350 degrees F
  2. In a large bowl, combine the oats, salt and cinnamon, pumpkin seeds, hemp seeds, sunflower seeds, protein powder, nuts and stir slightly
  3. In another medium glass bowl, heat in microwave: the coconut oil and syrups in small increments until melted and smooth
  4. Add the syrup mixture to the oat mixture
  5. Mix well until incorporated
  6. Add to large parchment lined cookie sheet
  7. Press down well until completely flattened and smooth
  8. Bake in preheated oven for about 15-20 minutes or until light golden brown. Let cool for a couple of hours
  9. Break apart and store in large glass jar and keep refrigerated or store in zip lock bags in freezer for 3 weeks
  10. Optional: mini dairy-free chocolate chips, dried fruit or other preferred nuts
