Old Fashioned “buttermilk” Flapjacks

Description

Enjoy these delicious healthy pancakes for breakfast or anytime of the day. Soft and sinfully like cakes, top these flapjacks with bananas, berries, coconut, chocolate sauce or pure maple syrup. Delicious!


Ingredients

Scale

2 cups non dairy milk (almond,coconut, flax, cashew, soy) mixed with 2 tablespoons apple cider vinegar, let rest to curdle

1 cup oat flour

1 cup whole wheat pastry flour

2 tablespoons ground flax mixed with 6 tablespoons water, let gel for 5 minutes

3 tablespoons baking power

1 teaspoon salt

1/4 teaspoon baking soda

1/4 cup coconut sugar ( or brown sugar)

1 tablespoon grapeseed oil

1/2 cup applesauce

1/2 quick oats


Instructions

Preheat a griddle or frying pan until medium high heat and couple of drops of water dance on top before adding the pancake batter.

To a large bowl, add the “curdled milk”, oil, flax egg, applesauce. Stir mixture well.

Add the dry ingredients all at once~ the flours, the baking soda and baking powder, salt, and oats.

Mix the dry ingredients into the wet until just incorporated.  Be careful not to overmix.

Ladle pancake batter onto hot griddle or pan.  Cover until small bubbles appear on the surface to flip each cake.  Serve warm with various toppings and plant based sausage. ( we like Field Roast breakfast sausages).
