Pumpkin Peanut Butter Chocolate Chip Cookies

Delicious cookies, just perfect for Halloween!


Ingredients

Scale
  • c peanut butter (softened)
  •   c canned pumpkin ( not pumpkin pie filling)
  • ½ c pure maple syrup
  • ½ c allulose or date “sugar”
  • 1 ½ c ground oat flour
  • ½ c almond flour
  • 1 teaspoon pumpkin pie spice
  • ½ teaspoon salt
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 cup non dairy dark chocolate chips

Instructions

Method: Preheat oven to 350 degrees F

  1. In a large bowl: mix peanut butter, syrup, canned pumpkin, syrup and “sugar” until incorporated well.
  2. Stir in : flours and baking powder and soda, pumpkin pie spice and salt.
  3. Mix until just incorporated.   Dough will be soft.
  4. Form into balls on parchment covered cookie sheet.  Refrigerate or freeze for at least 10 minutes.
  5. Bake for 10-12 minutes in preheated oven.
  6. Let cool before moving them onto plate.
  7. Freeze for up to 3 weeks or refrigerate for a week.
  8. Cookies will be pillowy soft and delicious.
