Sweet and Savory Summer Cancer Killing Salad

Sweet and Savory Summer Cancer Killing Salad with a Lemony Garlic Simple Dressing


Ingredients

Scale

Summer Salad:

  • Preheat oven to 375 degrees F
  • 34 cups of field greens, romaine, kale  in large bowl
  • 2 cups each: bite sized cauliflower florets and broccoli
  • 1/2 c soaked in water, dried unsweetened cherries
  • 1/4 c thinly sliced red onion
  • ½ c radishes, washed and quartered
  • *8 oz fusilli or similar whole grain, gluten free, bean high protein pasta
  • 1 cup grated or thinly shaved cabbage (I like trader joe’s shaved cabbage)
  • 2 organic chicken breasts, grilled or roasted or / plant based “chicken breasts” by eat meati brand (cooked on air fryer)
  • ¼ c slivered almonds, toasted either in oven or in skillet.  Careful not to burn.

Dressing:

  • Combine in jar with lid~ Shake vigorously to combine, set aside
  • 2 garlic cloves, minced
  • ½ c fresh lemon juice
  • Zest of lemon
  • 1 cup good olive oil
  • 1/4 c hot water
  • Salt, pepper, 1 tablespoon pure maple syrup

Instructions

  1. Massage broccoli and cauliflower with little olive oil to cover each and then sprinkle with salt and pepper, garlic and onion powders. 
  2. Roast broccoli and cauliflower on parchment paper lined cookie sheet for 17-20 minutes or until lightly roasted
  3. Cook pasta according to package directions.  Do not overcook but cook until just tender, drain and set aside.
  4. In a large bowl: add greens, onion, radishes, cherries, and then 2 cups of the pasta. Gently toss. 
  5. Add cooked chicken and lightly toss with the lemony dressing.
  6. To serve: add the toasted slivered almonds on top and enjoy.

Notes

*This is a killer salad with at least 7 ingredients that have been shown to kill cancer cells.  By strategically combining these foods into a delicious salad, you are helping your body to stay cancer free and even preventing cancer cells to form in the first place  

*Studies show that by incorporating more plants, specifically cruciferous vegetables and garlic and onions into your diet, you are improving the chances of fighting off cancer cells.
