Vegan And Healthy Double Chocolate “cakey” Brownies

Description

Your brownie recipe for a delicious dark rich chocolate cake like texture.  The chocolate ganache takes just a couple of minutes to make and it takes these brownies to another level of chocolate heaven. Be sure to under-bake these as they will set considerably as they cool.


Ingredients

Scale

1/2 cup melted dark chocolate chips

1/2 cup nut butter ( almond is best but cashew and peanut butter should work too)

1/2 cup pure maple syrup

1/3 cup coconut sugar ( can sub brown sugar)

1 flax egg ( 1 tablespoon ground flax mixed with 3 tablespoons water, rested for couple minutes)

1/2 cup applesauce

1 teaspoon vanilla

1/2 cup cacao ( haven’t tried cocoa yet )

1 cup oat flour ( can sub unbleached all purpose flour)

1/2 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon salt ( I use celtic salt)

Ganache~

1 cup dark chocolate chips

2 teaspoons coconut oil

pinch of salt


Instructions

Preheat oven to 350 degrees.

Spray a 9×9 pan with non stick cooking spray

In a large bowl, melt the chocolate chips over short intervals in the microwave.  About half way the process, add the nut butter to the chocolate and microwave for about 20 seconds until both are smooth and creamy.

Stir in the applesauce, vanilla, flax egg, pure maple syrup and coconut sugar. Incorporate well into the chocolate and nut butter mixture.

Add the dry ingredients such as the flour, baking soda, baking powder and cacao.  Gently fold into the chocolate mixture. Mix until incorporated gently but careful not to overmix.

Pour batter in prepared pan. Smooth out edges and bake for 12 minutes or until edges and middle look set.  Better to underbake as the brownies will set up once out of the oven.

While baking, take a small microwavable dish and add the chocolate chips to the coconut oil and melt in the microwave slowly.  Let cool slightly.

Once the brownies have completely cooled, pour the ganache over the brownies and again, let cool,

At this point, can cover and refridgerate to allow brownies to set up nicely.

When ready to serve, allow brownies to come to room temperature before cutting into them.
