Vegan Chocolate Banana Bread

Description

For this recipe, make sure to use really ripe bananas for best texture and sweetness. Such a yummy banana and chocolate treat!


Ingredients

Scale

4 bananas, peeled and pureed until really smooth( can do this with a potato smasher) to equal 2 cups

2 cups oat flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon salt

1 teaspoon vanilla

1 tablespoon cinnamon

1/2 cup cacao powder

3 tablespoon walnuts, coarsely chopped

1/4 cup non dairy milk

1 tablespoon apple cider vinegar

1/3 cup coconut sugar

1/4 cup pure maple syrup

1/4 cup mini dark chocolate chips

3 tablespoons olive oil


Instructions

Preheat oven to 350 degrees.

Spray non stick spray or line a 9×5 loaf pan with parchment paper

In a large bowl, combine the peeled bananas and mash with potato smasher until smooth.  Add the syrup, vanilla, milk, apple cider vinegar, milk, and oil.

Mix thoroughly.

Add the dry ingredients to the wet ingredients~ the flour, baking soda, baking powder. cacao powder, cinnamon. Gently stir in to incorporate  but careful not to overmix.

Add in the chocolate chips.

Pour batter in prepared loaf pan and spread evenly.

Top with the chopped walnuts.

Bake in preheated oven for about 40 to 43 minutes .  The bread will set as it cools so careful not to over bake
